Carrot and Coriander Soup

Serves 2

You will need:

  • 2 large, or 4 small carrots
  • 2 sticks celery
  • 1 onion
  • 1/2 tsp lazy garlic or 1 diced clove of garlic
  • 1 tsp coriander powder
  • salt n pepper to taste
  • a little chilli powder if you want a bit of heat to it
  • 1 chicken oxo cube
  • 11/2 pints of water
  • fresh diced coriander to garnish

Method:

Chop all vegetables, and put in a pan with all the spices and water.

Bring to the boil and simmer until the carrots are soft.

When cooked, place into a blender to smooth. Serve and garnish with the fresh coriander.

You can also top with a little creme fraiche from your allowance to make it silky.

Serve with whole grain bread
