Creamy Quinoa Porridge

Serves 1

You will need:

  • 100g quinoa
  • 1/4 teaspoon cinnamon
  • 1½ cup almond milk
  • 1/2 cup water
  • 2 tsp sweetener
  • 1 teaspoon vanilla extract
  • pinch of sea salt

Method:

Heat a saucepan over medium heat. Add quinoa, season with cinnamon & cook until toasted, for around 3 minutes.

Add almond milk, water, sweetener vanilla & sea salt. Bring to a boil, then reduce heat & cook until porridge is thick & grains are tender, about 25 minutes.

Add more water if needed. Stir occasionally, especially at the end, to prevent burning.
